Delicious coleslaw !

We decided to make some ribs, we haven't made some in a while ! They are so easy to make. Just dry-rub them with your favorite spices, put them in a crock pot and top them off with your favorite BBQ sauce. They cook while you're at work and you come home to a delicious smelling place !

We were wondering what to make to go with them and decided on making some coleslaw ! This recipe is for the coleslaw dressing !





Ingredients

  • A bag of coleslaw mix
  • 2/3 of a cup of mayo
  • 3 tbs of vegetable oil
  • 1 tbs sugar
  • 1 tbs white vinegar
  • salt & pepper
Whisk all the ingredients together. Add salt & pepper to taste. Pour the dressing onto the coleslaw mix and mix well together. Enjoy !

Mixed Greens, strawberry & pecan salad !

We made this a few weeks ago for a BBQ at Claudio's brother's place. Just haven't had the time to post the recipe ! Here is a picture of our final product. It was absolutely delicious and so simple !


Ingredients
  • Some mixed greens
  • 1 avocado
  • Cherry tomatoes
  • Cucumbers
  • Goat cheese 
  • Strawberries
  • Pecans
  • Olive oil
  • Balsamic vinegar 
  • Salt & pepper
I didn't put any amounts for each ingredient because it all depends on how much salad you want to make. All you need to do is mix all the ingredients together and enjoy !

The main thing you have to remember for the dressing is that the amount of vinegar is pretty much 1/3 of the olive oil. Also, you don't need much vinegar to make the salad taste good. I would just start with about 2 tablespoons and then add more if you like.

Quinoa Salad !

Thursday night, I decided to make a quinoa salad. It is easy to make, light and delicious. Always a success !


Ingredients
  • 1 1/2 - 2 cups water
  • 1 cup quinoa
  • 1 avocado
  • diced cucumber
  • diced cherry tomatoes
  • 1 diced apple
  •  1/3 cup olive oil
  • 1/4 cup balsamic vinegar
Put the water in a pot and wait till it boils.

When water is boiling, put the quinoa in until the quinoa absorbs all the water. Let it cool down. When I'm in a hurry and want my salad to be ready to eat in little time, I put it in a bowl in the freezer so it can get cold faster.

While the quinoa is cooking, dice all the veggies and the apple. Put as much as you like of each.

Mix all the ingredients together, add salt and pepper and voilĂ  !

Mexican Salad & Avocado Mayo !

We wanted to have tacos tonight and wanted a delicious side to go with them... So here's our take on a mexican style salad. It's very simple but delicious !


Ingredients
  • 1 can of black beans
  • 1 can of peaches & cream corn
  • 1 whole avocado diced
  • 1 cup cherry tomatoes diced
  • 1/2 lemon squeezed
  • 1/4 cup olive oil
  • salt & pepper

Just mix all the ingredients together. You can play around with the amount of lemon, salt & pepper depending on your taste.


Also, we decided we wanted to add a different sauce to the tacos so we made an avocado mayo.

Ingredients
  • 4 egg yolks
  • 3 cups vegetable oil
  • 1/2 a lemon squeezed
  • 1 whole ripe avocado
  • 2 cloves of garlic (we love garlic)
  • salt & pepper 

Separate the egg yolks from the whites and put the yolks in a bowl.

You will need a hand mixer. Beat the egg yolks with the lemon.

Add the oil in very slowly while beating the mix. This is a pretty long process, it's at least 20 minutes of mixing. It is VERY important to add the oil in slowly or else it will be too liquidy.

When the mixture is thick, add the avocado, garlic, salt & pepper and mix together. The garlic isn't mandatory but like we said we love garlic.

This makes a big batch. If you want less, adjust portions accordingly.
